You know fall is here when you see pumpkin flavoured everything!  Today we have our own Pumpkin Chocolate Chip Muffins as our Just Like Mom and Dad Real Recipe. They look so fluffy!  This recipe makes 24 muffins.  Don’t eat them all at once! ?

INGREDIENTS

  • 4 eggs

  • 2 cups white sugar

  • 2 cups pure pumpkin puree

  • 1 1/4 cups oil (vegetable or canola)

  • 1 tsp vanilla

  • 3 cups all-purpose flour

  • 2 tsp baking powder

  • 2 tsp baking soda

  • 2 tsp cinnamon

  • 1 tsp salt

  • 12 oz. chocolate chips

INSTRUCTIONS

Preheat oven to 400. Line muffin tin with paper liners or use a no-stick cooking spray.

In a large bowl, combine eggs, sugar, oil, vanilla and pumpkin. Stir until well-mixed.

In a separate bowl, stir together dry ingredients.

Using a spatula, gently fold dry ingredients into wet and add chocolate chips.

Fill muffin liners ¾ of the way full.  Place muffin tin in the oven and bake for 15 minutes.
